So I originally intended to take but a few months off of hosting my cook group when I had baby T, but due to a lack of motivation (and lots of excuses), It's turned into more than just a 'few months'. But my dinner ideas are running out, and I need more inspiration. So next Tuesday, March 8th, 6:00 pm, at my place we're back in action!! Our theme is 'crock pot favorites'! So I wanted to extend an invitation to you all, if your interested.... COME. It's always fun, and you leave with lots of GREAT new recipes!
Speaking of great recipes. I tried this yummy chicken marsala dish for dinner last night. It was awesome.! I added noodles to the recipe, which made it more of a meal. Give it a try!
4 boneless skinless chicken breasts, halved
2 Tbs. flour
2 Tbs. olive oil
2 c. fresh sliced mushrooms (i used more, because i love mushrooms)
2 Tbs. butter
3/4 c. marsala wine, or chicken broth
2 Tbs. minced fresh parsley
1/4 tsp. dried rosemary, crushed
grated parmesan cheese to taste
Flatten chicken to 1/4 in. thick. Place flour in re-sealable plastic bag, add chicken and shake to coat.
In a large skillet over medium heat cook chicken 3-5 minutes each side or until a meat thermometer reads 170 degrees. Remove and keep warm.
In the same skillet saute mushrooms in butter until tender. Add wine, parsley, and rosemary. Bring to a boil and cook until liquid is reduced by half. Serve over chicken, and sprinkle with desired amount of cheese. Enjoy!!
